Ingredients
- 1 bunch Coarsely chopped fresh cilantro
- 3 cm Fresh ginger root, peeled and chopped
- 2.5 Lime juice
- 45 ml Mirin
- 125 ml Soy sauce
- 30 ml Sesame oil
- 350 g Seal fillet or equivalent piece for the tataki
- 15 ml Vegetable oil
- 2 ml Sesame seeds (two colors if possible)
Instructions
In a bowl, put the lemongrass, 3/4 of the cilantro, ginger and lime juice. Add the mirin, soy sauce and sesame oil. Mix well. Place the entire piece of meat in it. Leave to marinate overnight. Turn the meat from time to time. Before cooking, take the meat out of the fridge for 2 hours so that it is at room temperature.
In a cast iron skillet, heat a little oil. Sear the piece of seal for 3 to 4 minutes on each side. If you want the meat to be a little more cooked, reduce the heat and increase the cooking time by a few minutes on each side. Filter the marinade. Heat and reduce the juice of the marinade until a sauce texture is obtained. Reserve. Cut the tataki into thin strips and arrange them on a serving platter. Sprinkle with chopped cilantro and sesame seeds.
Serve the tataki tigde, almost cold for a tastier result.
