Ingredients
- 30 g (1 oz) blue cheese (Ciel de Charlevoix)
- 30 g (2 tbsp.) Butter
- 5 g (1 teaspoon) strong mustard
- 1 shallot, chopped
- 4 slices of seal loin, about 150 g (5 oz) each
- 30 ml (2 tbsp.) Olive oil
- Salt and pepper
Instructions
1. Using a fork, combine cheese, butter, mustard and shallot in a bowl. Reserve.
2. Preheat the grill to high temperature. Oil the seal slices and cook for about 3 minutes per side for rare cooking. Salt and pepper.
3. Place the meat on the plate, cover with the blue cheese butter and serve immediately.
